Did you know chicken noodle soup has proven benefits when you're sick? With the seasonal snots running through our house, there was no better time for some home made chicken noodle soup. This is so easy, I got it ready and in the crock pot in just a few minutes and was ready by dinner.
Crock Pot Chicken Noodle
2lbs chicken breast
3 stalks celery
2 cups chopped fresh carrots
6 cups chicken broth
2 tbs EVOO
1 small onion (or 1tsp onion powder)
2 cloves crushed garlic (or 1/2 tsp garlic powder)
Salt & Pepper to taste (I used about 1/4 tsp of each)
1 package egg noodles
1. Put chicken, carrots, celery, EVOO, and broth into large crock pot.
2. Add onions & garlic (or seasonings) and stir gently.
3. Salt & pepper
4. Cook on low for 6-8 hours or until chicken shreds easily
5. Boil egg noodles separately according to package directions.
Put noodles in bowl and top with soup for some serious home made goodness!
(Tip: I boiled the noodles separately because the first time I made this they dissolved in the crock. The crock gets super hot, and unless you've got a way to remove all the soup at serving time, I would just boil my noodles separately for best results.)
