Another recipe to finish out the week! This is one of our current favorites. Unlike the other recipes I've shared, this dish from the More with Less Cookbook uses regular honey to create a sweet sauce that is brushed over chicken. It pairs perfectly with rice.
It's a bit sentimental, as well, as this cookbook is from my late Grandma Stoltzfus. She gave us this cookbook when we got married and notated the Honey-Baked Chicken recipe in the front as one of her favorites. 💛
Honey-Baked Chicken
Ingredients:
1 3 lb fryer, cut up (I use chicken thighs)
1/3 cup butter, melted
1/3 cup honey
2 Tbsp prepared mustard
1 tsp salt
1 tsp curry powder
Instructions:
Bake 1 1/4 hour, basting every 15 minutes until chicken is tender and nicely browned. Good served with rice.

Grilled Hot Honey Chicken with Lime Corn Salad
This grilled hot honey chicken is simple and flavorful. Paired with a fresh sweet corn salad that is crisp, refreshing, crunchy and full of lime, this is a weeknight meal that cannot be missed!
Ingredients:
Hot Honey Chicken
1 pound boneless, skinless chicken thighs
¼ cup olive oil
2 tablespoons freshly squeezed lemon juice
2 tablespoons hot honey, plus more for drizzling
1 teaspoon freshly grated lemon zest
1 garlic clove, minced
kosher salt and pepper
Corn Salad
6 ears of sweet corn, kernels cut from the cob
2 green onions, thinly sliced
¼ cup chopped fresh cilantro
¼ cup sour cream
2 tablespoon freshly squeezed lime juice
1 tablespoon freshly grated lime zest
kosher salt and pepper
Instructions:
1. Place the chicken in a glass dish or resealable bag. Whisk together the olive oil, lemon juice, hot honey, lemon zest, garlic and a big pinch of salt and pepper. Pour it over the chicken and marinate for at least 30 minutes or even overnight.
2. Preheat the grill to the highest setting. Once hot, place the chicken on the grill and cook for 5 minutes, or until the chicken easily flips. Flip and the chicken and grill for 5 to 6 minutes more, or until the internal temperature of the chicken reaches 165 degrees F. Let the chicken rest for 5 to 10 minutes before serving. Drizzle with extra hot honey.
3. To make the corn salad, place the corn, green onions and cilantro in a bowl.
4. In a smaller bowl, whisk together the sour cream, lime juice, zest, and a big pinch of salt and pepper. Stir the sour cream mixture into the corn until combined. Taste and season more if needed.
5. Serve the chicken with the corn and enjoy!

This Hot Honey Chex Mix is a sweet and spicy snack mix with the perfect balance of flavors. Salty pretzels, cereal and cashews are caramelized with a chili infused honey for a delicious snack, perfect for an upcoming holiday get together!
Hot Honey Chex Mix
Ingredients:
4 cups rice Chex Mix
4 cups corn Chex Mix
3 cups wheat Chex Mix
3 cups pretzels
4 cups salted cashews (16-20 oz.)
1 cup salted butter
2/3 cup hot honey
Instructions
1. Preheat oven to 350°F.
2. Add all the cereal, pretzels and nuts to a large roasting pan.
3. Melt butter in a microwave safe bowl. Stir in hot honey and whisk until well combined.
4. Pour the honey butter over the cereal mixture and stir very well until all the cereal is well coated.
5. Bake at 350°F for 15 minutes. Remove from the oven and carefully stir the cereal. Return to the oven and bake for an additional 10 minutes. Stir and return for a final 5 minutes.
6. Spread the Chex mix over a wax paper lined counter to cool for at least 10 minutes.
7. Once completely cooled, store in an airtight container.

Hot Honey Butternut Squash Soup
Ingredients:
2 tablespoons butter
1 small onion, chopped
3 garlic cloves, chopped
1 tablespoon ground ginger
1 teaspoon ground cumin
1 (use two if they're small) butternut squash, peeled, seeded, and diced
1 Idaho potato, peeled and diced
3 cups chicken or vegetable stock
1/2 cup cream
2 tablespoons hot honey, plus more to taste
Salt and freshly ground black pepper, to taste
Directions:
1. In a large pot, heat the butter and sauté the onions and garlic until softened. Add the ground ginger and cumin. Do not burn the garlic. Next, add the squash, potato, and chicken stock and cook, covered, on high heat until the squash is cooked and softened. (If you don't allow the squash to cook fully, the texture will not be nice when blended, so that is an important step.)
2. Allow to cool. Blend in batches until the entire soup is puréed and creamy. Return to the pot, add the cream and hot honey, stir well, and allow to simmer on low heat for another 30 minutes. Finish by adding salt and pepper to taste.
3. Please note you will most likely need to adjust the amounts in this recipe, because the flavor will depend on how large and sweet your squash is, how heavy your cream is, and also how hot your honey is. So be ready to taste and alter a couple times before serving.
4. Serve with a big crusty baguette or with a dollop of sour cream or crème fraîche and some chopped chives.

A lot of you are wondering how to use our hot honey, so this week we'll be sharing some recipes. This salmon from Food52 uses a hot honey marinade before it's broiled in the oven to create a sweet and spicy caramelized finish. If you try it, let us know what you think!
Hot Honey Glazed Salmon
Ingredients:
1 cup coconut aminos
1/4 cup hot honey
2 tablespoons lemon juice
1 inch peeled fresh ginger, thinly sliced
3 gloves garlic, smashed
4 salmon fillets, about 1 1/2 pounds
Directions:
1. Whisk coconut aminos, hot honey, lemon juice, ginger, and garlic together until honey dissolves.
2. Place salmon fillets, skin-side up, in marinade.
3. Allow to marinate for at least 10 minutes, preferably for 30.
4. Preheat broiler to high.
5. Remove salmon from marinade and transfer to a sheet pan lined with parchment paper. Put the salmon under the broiler skin-side down, and broil without turning until exterior is well-caramelized and the fish is just cooked through, 7-10 minutes, depending on thickness and the distance from broiler.
6. Serve with salad or seasonal vegetables as desired.
