Ingredients

6 tbsp unsalted butter (room temp)
½ cup heavy cream
Pinch of salt
For the chocolate ganache:
8 oz (225 g) semi-sweet chocolate, chopped
1 cup heavy cream
For topping:
Caramel drizzle
Chocolate chunks or squares
Whipped cream or chocolate buttercream swirls
Instructions
Make the brownie base
Preheat oven to 350°F (175°C). Grease and line a square baking pan.
Melt butter and mix with sugar until smooth. Add eggs and vanilla.
Sift in flour, cocoa, baking powder, and salt. Mix until combined.
Spread into pan and bake for 20–25 minutes. Let cool.
Prepare the cheesecake layer
Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
Pour over the cooled brownie base. Bake for another 30–35 minutes until set. Let cool completely.
Make the caramel sauce
In a saucepan over medium heat, melt sugar until golden amber.

2 large apples (about 400 g / 14 oz), cored and sliced into 1/4-inch (0.6 cm) rounds
120 g (4.2 oz / 1/2 cup) Brie cheese, sliced
1/3 cup (80 g) cranberry sauce (homemade or store-bought)
1/4 cup (30 g) walnuts, toasted and crumbled
1 teaspoon (5 ml) honey (optional)
Fresh thyme leaves, for garnish
Directions:
Arrange apple slices on a serving platter. Pat dry with a paper towel to remove excess moisture.
Place a small slice of Brie on each apple round.
