Placing sliced mushrooms in direct sunlight (gills facing up) for 15 minutes to an hour can greatly boost their Vitamin D content. UV light transforms the natural compound ergosterol in mushrooms into Vitamin D2, creating a plant-based source of Vitamin D that remains fairly stable even after cooking.
For best results, slice the mushrooms to expose more surface area and place them in direct midday sun for about 15β60 minutes. Research suggests that sun-exposed mushrooms can contain significant amounts of Vitamin D2, similar to how human skin produces Vitamin D from sunlight exposure.
The added Vitamin D generally stays stable during cooking, though boiling in large amounts of water may reduce it, so sautΓ©ing is often preferred. The increased Vitamin D levels can also remain for up to 8 days when refrigerated. Even common supermarket button mushrooms can benefit from this simple process.
