I honestly can only tell that the photo on the left is because because of my little nose 😳 Honestly every time I see it it hurts me how bad I let my health get but it also keeps me real humble lol. this is about 4.5 years apart. Lost 180 pounds and gained my entire life back.

Low Carb Coconut Lime Cupcakes
Serving size: 12
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
2/3 almond flour
2/3 unsweetened coconut flakes
1 tbsp psyllium husk
2/3 cup erythritol
3 eggs
1/2 tsp vanilla extract
1/2 tsp salt
2 tsp baking powder
1/2 cup butter
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Lime Buttercream
3 eggs
1/4 cup powdered erythritol
3/4 cup butter
1/2 lime, juice
lime zest
red currants
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
1. Preheat the oven to 350°F and line a muffin tin with silicone liners.
2. In a bowl, beat together eggs and swerve sweetener.
3. Add melted butter and vanilla extract.
4. Continue to beat until fully incorporated.
5. Mix in all dry ingredients and mix well until a smooth and slightly sticky dough has been formed.
6. Pour batter into prepared muffin tin and bake for 15 minutes or until lightly golden brown on top.
7. Meanwhile, place a pan over stovetop.
8. Whisk together eggs and powdered swerve sweetener in pan.
9. Turn heat on to medium and gently simmer until mixture starts to thicken.
10. Whisk constantly to prevent the eggs from overcooking.
11. Remove from heat and add lime juice and butter.
12. Mix well until the butter has completely melted.
13. Refrigerate until it thickens.
14. Top muffin with lime buttercream and garnish with red currants.
15. Enjoy!

How did I go from Obese to underweight to Fit?
Through Knowledge and Discipline
Being obese is no joke, I know first hand what its like weighing in at my heaviest of 136kgs . The chafing of my skin, zero energy, walking into clothes stores only to be disappointed that what I liked on the rack, I couldn’t fit . Which then caused me to binge eat more, not to mention my health was deteriorating . It was a vicious cycle. It was time to change and reclaim my life back.
Fast forward through all the fad diets and products, I became underweight tipping the scales at only 59kgs (I’m 5ft 9”) I didn’t like what I saw in the mirror, frail with no energy and zero curves. Clearly this wasn’t working either. I decided to learn and study more about nutrition and weight training and built my own strong curves .
I no longer care about how much I weigh, I have a great relationship with food and my knowledge in nutrition and weight training is a lot more extensive than what it was back then. Which is what made me leave my 9-5 job to become a qualified trainer and help others who are in the same position as I once was.

I was a chronic dieter for years and years. I would do endless cardio, cut out carbs, lose some weight and gain it back. I would live off salad during the week, and then binge on the weekend after starving all week. It took me years of pain and struggle, and trial and error to finally get it right. Hiring a coach, and three key things helped me to get the weight off PERMANENTLY.

Aren’t pancakes carb-laden and totally off limits on the keto diet? Not if you make the following fluffy disks of deliciousness. You can even go heavy on the syrup if you invest in a zero-calorie variety, such as Lakanto brand. And of course, smear on the butter if your day’s fat macros allow! For smaller pancakes, as those pictured here, make each pancake with 1/8 cup batter, in which case two pancakes makes one serving.
