I met this client in October of 2018 when she had just graduated from college. 7 years and 41 lbs later she was the most glowing bride at her wedding last weekend. I’ve been so blessed to be able to see her through so many milestones and am incredibly proud of her unbelievable progress. Here’s to another 7 years!

Portobello mushroom Parmesan 😍 Again, can’t take credit (thanks ), but seriously proud of myself for making it to week 3 (I tend to give up on meal delivery services lol). I’m going to have mine with black bean pasta for more fiber. Let’s see if I can get my picky 2 year old to try this (I’m thinking no, but it’s worth a shot!) Obsessed with these lower carb egg tacos on cauliflower sandwich thins. I added kale to get in some non-starchy vegetables, feta and hot sauce. So easy and delicious! Hope you all have a great Sunday 💜

For those of you (like myself) who don’t love plain Greek yogurt, this is a great trick; blend a serving of plain Greek yogurt with berries or whatever fruit you like to flavor naturally. This helps add some extra flavor without a ton of processed sugar or artificial sweeteners. I added a serving of high fiber cereal on top to keep me full for longer throughout the morning. Confession, I used my daughter’s baby food maker to blend this since it’s much easier to clean than my Vitamix lol. Hey, it worked! Hope you all have a great Tuesday!

Mac and cheese, please! For some reason I was really craving Mac and cheese tonight so I made a very quick guilt-free version with hearts of palm noodles, 1 tbsp low-fat cream cheese, slice of cheddar and garlic powder, topped with paprika. Hearts of palm noodles contain only 2 net carbs per serving and are a fab substitute for regular pasta (coming from someone who doesn’t love zucchini noodles, sorry guys!) What are some of your favorite healthy swaps?

Loaded cauliflower pizza ‼️ I was craving pizza, eggs and a veggie burger so why not put them all together (hello 9 months pregnant 🤰)!? And it was delish! I sautéed kale with liquid egg whites and a bit of low fat mozzarella cheese; put on top of an crust (only 2 net carbs for the whole crust) with sauce. I added a California burger (cut into pieces) on top. This was so filling that I only ate half (and I’m never full from just one slice of regular pizza). Protein and fiber, am I right? By the way, it’s important to be mindful of the brand of cauliflower pizza crust you purchase, as some are very high in carbs (and because they say they are made out of cauliflower, shoppers oftentimes don’t even realize). I’m a huge fan of the nutritional facts and taste of crusts and find them to be a great low carb alternative to regular pizza. Anyway, hope you all are enjoying this beautiful day 😍

More kale for me please! I’m obsessed with this kale, feta, avocado combo 🥬 I added in some leftover sautéed chicken from last night for protein and 2 crackers for extra fiber (I love crumbling GG crackers in my salad for more crunch ➡️). Could I be eating pizza every day going into my 9th month of pregnancy? Sure. Do I feel so much better, more energized, less bloated eating healthier options? Absolutely. That’s not to say I don’t have “unhealthy” meals (which I certainly do), but I try to choose foods for the most part that will be nourishing and delicious at the same time (which there are plenty of!) As I always tell my clients, YOU are in control of your own health. Hope you are all enjoying this beautiful day ❤️
