Base: Green or Grain (or both!)
Protein: pick a protein to keep you full
Starch or warm veggie
Fresh veggies: 1-2 veggies for crunch, crispness and freshness
Nuts/seeds: adds CRUNCH, texture and healthy fats!
Cheese or fat: adds creaminess or saltiness (like a feta or avocado or both!)
Dressing: pulls it all together!
Bonus: fresh herbs like dill, parsley or cilantro
The secret to making a salad yummy is combining different textures, flavors and a delicious dressing BUT a perfect salad in my opinion is also a filling salad that can keep you going and give you energy and fuel. Including all of these elements in a salad helps to make it a complete meal.
Extra tips:
1. Massage your kale if you’re not finely shredding it like me
2. Make dressing in bottom of the bowl to avoid dirtying an extra dish
3. Use a hearty green like kale to prevent sogginess in the fridge
Meal prep kale salad:
- Shredded kale
- Sautéed tofu
- Tri color quinoa
- Cucumber
- Tomato
- Roasted sweet potato
- Dairy-free feta
- Sunflower seeds
- Balsamic vinaigrette: olive oil, balsamic vinegar and salt
I managed to lose over 20kg with a simple method that completely changed my life. 🥲
