🍓 Strawberry Honeybun Cake

A moist, buttery honey cake with little bursts of fresh strawberries in every bite. Topped off with a drizzle of delicate strawberry glaze, it’s simple and cozy dessert; perfect for two or even more (gotta love those neutral bowls).

🧾 Ingredients

Cake

2 cups (250g) all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

227g unsalted butter, softened (1cup)

1 3/4 cups (350g) sugar

2 large eggs

1 teaspoon vanilla extract

1 cup (240ml) buttermilk

1/2 cup (120ml) honey

1 cup (140 g) fresh strawberries, chopped

Strawberry Glaze

1 cup (120g) powdered sugar

2–4 tablespoons milk

1/4 cup (50g) strawberry puree, fresh

👩‍🍳 Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan lightly.

In a mixing bowl, whisk together flour with baking powder, baking soda and salt.

Method1In a large bowl, beat together the butter and sugar until pale, creamy and fluffy Beat in the eggs, 1 at a time until combined followed by the vanilla.

In another bowl, mix together the buttermilk and honey.

Mix the dry ingredients gradually with the butter mixture alternating with the buttermilk mixture. Start and finish with the dry ingredients, mixing only until combined.

Carefully, fold in each the diced strawberries.

Spread the batter into the prepared pan. Bake for 30–35 minutes or until a toothpick inserted into the middle comes out clean.

Let the cake cool completely in the pan.

In a large bowl, whisk together powdered sugar and milk until it is smooth to make the glaze If needed, add additional milk for a pourable consistency and stir in the strawberry puree.

Drizzle the glaze over the cooled cake and allow the glaze to set before slicing.

✨ Helpful Tips

It is best to use taste, ripe strawberries.

You don't want to overmix as that will yield a tougher cake — which is not ideally what you're after here.

Store at room temperature for a day, or refrigerate and it will last longer.
