A couple of years ago, while I was farming microgreens here in San Diego, I had the chance to meet Chef Alex Carballo. From day one, I was impressed by his deep knowledge of the restaurant business, food systems, regenerative agriculture, and the way he thinks about hospitality as a true community experience.
Recently, we crossed paths again at Fox Point Farms, and it was inspiring to see his vision continue evolving. Now I’m beyond excited to collaborate with him on his incredible new project, NÓMADA in Carlsbad.
Chef Alex has built a reputation across some of San Diego’s most respected culinary concepts, from Stone Brewing and The Fishery to Fox Point Farms always bringing together culture, sustainability, flavor, and innovation.
What excites me most is the opportunity to explore together the future of the “Cognitive Functional Dining Experience” where food is not just about taste, but also about mental clarity, longevity, human connection, and overall wellbeing.
At NÓMADA, rooted in regional Mexican cuisine and inspired by Chef Alex’s heritage and travels across Mexico, the vision already goes beyond traditional dining.
