Tonight’s dinner was quick and easy! 🤌
It was a take on Chicken Parmesan, but no breading, it was gluten free and low carb. To make it dairy free, use dairy free ricotta and vegan cheese shreds.
I served mine over a salad while my family had theirs over pasta.
It was made easy by putting everything on the sheet pan and in the oven while I made the salad and pasta. Easy 30 minute meal and everyone enjoyed it. I cut up a cantaloupe for dessert. ✅

Two new finds from Costco to share!
My daughter loves sweet potato fries and these are made w/o seed oils! They use olive a/o avocado oil. 👍 Crisp them in the oven or air fryer and they’re delicious!
I’m going to use the sheet pan veggies and chicken breasts this weekend to batch prep and bake a couple of meals. Sheet pan meals are a great way to make healthy meals easier. Frozen, pre cut veggies make it even easier! Plus frozen veggies often retain more nutrients than fresh and are less expensive, so win-win!
Both of these are organic so it’s great for peace of mind avoiding unwanted chemicals and pesticides on your food. This is especially important for kiddos to reduce their toxin exposure.
This same Costco trip I bought two big bags of organic Mediterranean salad kits, a bag of organic apples, a bag of organic celery, organic strawberries, and Kize bars! Oh, and a new dog toy! 🐶

All joking aside, balance is key to a healthy lifestyle.
Do I want you to give up coffee, eating out with friends and family, enjoying a slice of birthday cake? Of course not! But keeping it all in moderation is incredibly helpful.
I love recommending trying an 80/20 balance to make things easier to maintain. 80% of the time eating healthful foods and 20% enjoying the fun stuff. When we do this we’re not depriving ourselves of the special occasions and bonding time, but rather primarily filling our meals with nutrient rich foods so those fun foods are ok for our bodies to handle. So, if you go out to eat - enjoy it, just don’t go eat out everyday. 😉

Am I perfect with my healthy habits? No, I’m human. But I keep showing up, again and again. For myself, for my health, for my family, for my future. 🤗
During a work day movement can seem tricky! When you have a spare minute, add an “Exercise Snack”! It can be as short as a minute, just move your body! Today was squats. I’ve done lunges, a quick walk, using light weights at my desk, calf raises… just get moving!

I love sneaking green into my day however I can. Fresh, frozen, sautéed, baked… Greens are detoxifying, purifying, antioxidant rich, cancer preventive and more. Plus they taste good!
Frozen spinach or kale are an easy add to your cooked meal or smoothie; fresh for salads or soups (or smoothie!), baked asparagus, sautéed kale or collards with olive oil and S&P and garlic - delicious side or snack; Brussels sprouts or other greens with your eggs; add to your stews… 🥬
