๐Ÿ  Roasted Sweet Potato Rounds with Honey & Feta
These get tossed in spices and hot honey, roasted until crispy around the edges, and served with salty crumbles of feta cheese and fresh herbs!
Ingredients:
- 3 large sweet potatoes
- 3 tablespoons olive oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon red pepper flakes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon regular or hot honey (spicy is delicious!)
- 1/3 cup crumbled feta cheese
- Fresh chives or parsley, chopped
- Additional honey, for serving
Instructions:
1. Preheat the oven to 425ยฐF.
2. Wash the sweet potatoes well and pat dry. Slice the potatoes into โ…“-inch thick round slices.
3. Drizzle the oil on a large rimmed sheet tray. Add the sweet potatoes and turn them to evenly coat in the oil. You may need to use two sheet trays for this, depending on how large your potatoes are to start. You donโ€™t want the potato rounds to be touching on the tray โ€“ give them plenty of room to roast.
4. Sprinkle over the spices and salt and then drizzle over the honey. Turn the potatoes again to evenly coat in the seasonings.
5. Bake in the oven for 20 minutes. Flip the potatoes over and then place back in the oven for another 20-25 minutes, or until the potatoes are golden and crispy around the edges.
6. Carefully transfer the potatoes to a serving platter and season with a little more salt.
7. Drizzle over a little more honey and then crumble the feta cheese over top. Finish with fresh chives or parsley.
8. Serve while warm.

๐ŸŒ๐ŸซThese healthy chocolate banana muffins are extremely delicious, moist, fluffy, sweet, flavorful, and so much more!

Yield: 12 muffins
Ingredients:
* 3 medium sized ripe bananas (1 1/4 cup mashed)
* 4 eggs (room temperature)
* 1/3 cup coconut sugar
* 1/4 cup coconut oil (melted and cooled to room temperature)
* 1/4 cup maple syrup (room temperature)
* 2 teaspoons vanilla extract
* 1 1/4 cup almond flour (blanched almond flour- not almond meal)
* 1/2 cup cacao powder
* 1/2 cup tapioca starch (it can also be called tapioca flour)
* 1 teaspoon baking soda
* 1/4 teaspoon sea salt
* 1/2 โ€“ 3/4 cup chocolate chips (use dairy-free, paleo, refined sugar-free as needed)

Instructions:
1. Preheat your oven to 375 degrees Fahrenheit and line a muffin tin with 12 liners or grease with oil.
2. Start my mashing your ripe banana very well and measure to make sure you have enough. Then, add to a large mixing bowl along with the eggs, coconut sugar, coconut oil, maple syrup and vanilla extract. Use a whisk to combine the wet ingredients really well.
3. To another medium-sized mixing bowl add almond flour, cacao powder, tapioca starch, baking soda, sea salt. Stir these dry ingredients together in order to break up any clumps.
4. Transfer the combined dry ingredients to the bowl of combined wet ingredients and stir until almost completely mixed. At this point, add in your chocolate chips and finish mixing until everything is combined.
5. Divide the batter evenly between the 12 muffin cups. You can add more chocolate chips on the top of each muffin, if you like.
6. Place the muffin tin in your preheated oven and bake for 20-25 minutes or until an inserted toothpick comes out clean (which means theyโ€™re done baking).
7. Eat leftovers within 3-4 days.
