I got 43 minis out of this recipe and I can eat 4 of them for only 1g of carbs!! These three ingredients make the best chocolate muffins! Imagine if we eat them warm with a scoop of Rebel ice cream!! ๐๐๐
***edit: if you make 12 regular size muffins it's 2 grams of carbs per muffin

These make great buns / bread. I use a recipe of 8 eggs, 4 cups fine grated cheese, 2 cups almond flour, 2 rounded teaspoons baking powder. Mini dashes are inexpensive!!! And prevent you eating the crap in keto bread.

I make these cheese chips every week. Swiss is my favorite but really, any cheese slices will work (or if you're really ambitious, cut your own cheese squares ๐).
Quarter the cheese slices and place them on a parchment lined baking sheet. Sprinkle Everything Bagel seasoning (or your choice) and bake in a preheated oven at 375 for 10-12 minutes. Let them cool for a few minutes before you try to eat..um, I mean remove, them from the sheet onto a paper towel. I store them in a plastic bag but I don't know how long that they're good for....they never last long!
PS- don't worry if they melt and touch, they snap apart perfectly like saltine crackers

This is hands down the BEST recipe for keto pizza! Itโs so easy to make and even my non-keto hubby loves it!
Keto Skillet Pizza!๐
INGREDIENTS:
* 2 ounces cream cheese
* 2 cups mozzarella, shredded
* 2 eggs, beaten
* 1 cup almond flour
* Pinch of salt & pepper
INSTRUCTIONS:
1) Preheat oven to 400 F, grease a cast iron pan.
2) Mix cream cheese and mozzarella together in a bowl and microwave for 1 minute. Stir and heat additional 20 seconds until melted and mixing smoothly.
3) Add beaten eggs to almond flour, mix well.
4) Combine with the cheese mixture and work until a dough is formed (I use my hands!).
5) Push dough into cast iron skillet (like you would for a deep dish pizza - I cover my hands in oil first so that the dough doesnโt stick to them!). Poke holes to avoid air bubbles. Bake for 10-15 minutes (I bake 15 min).
6) Then add low carb pizza sauce (Raoโs), place desired toppings, and return to the oven for another 10-15 min! (I bake another 15 min, but last couple of minutes I broil to crisp the top a little!)
Let it cool for 10-15 minutes before serving
