one pot chicken and orzo (husband rating: 11/10) this is a remake of our most popular recipe EVER - loved by over 3 million of you 😱 This time I added sun dried tomatoes and basil. Great for families or meal prep and is so easy to make all in one pot! Ingredients - olive oil - 4 chicken thighs - 2 cups of spinach ~ 3 oz sun dried tomatoes - 16 oz orzo - 1 tbsp garlic - 3 1/2 cups chicken broth (I use @kettleandfire) - parmesan ~ basil directions: 1. heat pan with olive oil and and sear chicken on medium high for three mins each side. Just enough to brown the chicken. eating 100g of protein is impossible is what I used to tell myself… BUT it really isn’t as hard as you’d think. For this day, I specifically incorporated a lot of plant based protein and focused on where I could ADD in ingredients to increase overall intake - i.e. adding feta, legumes or nuts. Protein helps you feel more energized and satiated especially after a workout. There are endless swaps and modifications you can make to your meals to boost your daily protein. Challenge me in the comments if you don’t believe me!
