My girl Tori haven’t seen in awhile but still rocking those curls!

Eat this to feel nourished and energized! 

Recipe:
- 1 tbs olive oil
- 1 large white/yellow onion, chopped 
-1 or 2 green bell peppers 
- 1/2 tsp salt and black pepper, more to taste
- 3 garlic cloves, chopped
- 3 tbs italian seasoning 
- 1/4-1/2 tsp red pepper flakes depending on your spice preference 
- 3 tbs tomato paste 
- 1 lb of grassfed ground beef 
- 1 28 oz can of diced tomatoes 
- 4 cups beef bone broth (or broth of choice)
- 1 cup dried french green lentils, rinsed and drained 
- 4-6 cups of kale or spinach washed and ripped/chopped into small pieces 
- OPTIONAL 1/4 cup of heavy cream and parm cheese. If you really want to absorb all the iron, it will be without dairy!! 

Add oil to a large heated pot. Add in chopped onions and garlic and saute for 3-4 minutes or until onions are translucent. Add in ground beef and break apart with a spoon into small pieces. Cook on medium until ground beef is well cooked and no longer pink. Add in tomato paste and stir until beef is well coated. Add in diced tomatoes, italian seasoning, salt, pepper, red pepper flakes, and bone broth. Stir well. Add in dried lentils. Bring to a boil and then reduce to a simmer. Cook for 25 minutes on low/covered or until lentils are fully cooked. Add in chopped kale and cover again for another 5 minutes or until the greens are soft. I am obsessed with dairy right now now that my son can tolerate it again, but you can totally skip! If you want you can add some heavy cream and cheese right at the end!
