We need cholesterol in our skin's cells to make vitamin D from sunlight.

During exposure to sunlight, cholesterol in the skin absorbs UVB radiation and is converted into vitamin D3. Only UVB radiation increases serum vitamin D levels.

The vitamin D is later transformed again in the liver and kidneys, but cholesterol is needed for the first step.

Sun induced vitamin D synthesis is greatly influenced by season, time of day, latitude, altitude, air pollution, skin pigmentation, sunscreen use, passing through glass and plastic, and aging.

Most cells and organs in the body have a vitamin D receptor and many cells and organs are able to produce vitamin D. 

A three-part strategy of: increasing foods that contain vitamin D, sensible sun exposure recommendations, and ingesting a vitamin D supplement when needed, should be implemented to prevent vitamin D deficiency and its negative health consequences.

Studies have clearly shown that adequate intake of vitamin D is essential for bone development, skeletal health, healthy muscles and teeth and regulating the immune system.

Recent research found an average serving of eggs (2 x 60g eggs) contains 8.2mcg of vitamin D, a substantial portion of the recommended dietary vitamin D intake.

With an average serving of two eggs providing 82% of your daily recommended intake of vitamin D, eggs contain some of the highest quantities of vitamin D of any food.

Eggs are also naturally high in cholesterol. But the cholesterol in eggs doesn't raise total cholesterol levels.

Eggs consistently raise HDL (the “good”) cholesterol. For 70% of people, there is no increase in total or LDL cholesterol.

This highlights that eggs are one of the highest natural sources of vitamin D and also a good source of cholesterol.

If you aren't getting enough sun exposure, then food sources become even more important. Some foods, like eggs, provide a lot of vitamin D and cholesterol, while others provide smaller amounts.

• Tuna
• Salmon
• Mushrooms

• Eggs

• Shellfish
• Pastured steak
• Organ Meats
• Cheese
