โช๏ธHere is a Chicken and Avocado Wrap recipe that is a great snack for the day! ๐ฏ๐ฅ๐ฅฌ
๐ Ingredients:
- 1 chicken breast (about 200g)
- 1 ripe avocado
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 lemon (juice)
- 4 lettuce leaves
- 1 tomato, sliced
- 1/4 red onion, thinly sliced (optional)
- 4 whole wheat tortillas or wraps
๐ดInstructions:
1. **Prepare the Chicken**:
- Season the chicken breast with salt, pepper, and paprika.
- In a skillet, heat the olive oil and sautรฉ the garlic until golden.
- Add the chicken breast and cook for about 5-7 minutes on each side, or until fully cooked and golden.
- Remove from heat, let it cool slightly, and slice into strips.
2. **Prepare the Avocado**:
- Cut the avocado in half, remove the pit, and scoop out the flesh.
- Mash the avocado with a fork and season with lemon juice, salt, and pepper.
3. **Assemble the Wrap**:
- Warm the tortillas in a skillet or microwave for a few seconds to make them more pliable.
- Spread a layer of mashed avocado on each tortilla.
- Add the sliced chicken, lettuce leaves, tomato slices, and optionally, red onion.
- Roll up the tortilla, folding in the sides to keep the filling inside.

# # # Ingredients:
- 2 medium apples (peeled and chopped)
- 1 cup oat flour
- 1/2 cup almond flour (or another whole grain flour)
- 1/4 cup coconut sugar (or natural sweetener of your choice)
- 2 eggs
- 1/4 cup coconut oil (or another healthy oil)
- 1/2 cup plain Greek yogurt
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (optional)
- A pinch of salt
# # # Instructions:
1. **Preheat the oven** to 180ยฐC (350ยฐF) and grease a baking pan or line it with parchment paper.
2. **Mix the dry ingredients:** In a large bowl, combine the oat flour, almond flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt.
3. **Prepare the apples:** In another bowl, add the chopped apples. Optionally, you can toss them with a bit of cinnamon.
4. **Mix the wet ingredients:** In a separate bowl, whisk the eggs, then add the coconut oil and Greek yogurt, mixing well.
