Vanessa Mijares is Paracore’s resident nutritionist and soon-to-be Registered Dietitian (RD). Vanessa’s desire to enter the dietetics profession was a slow growing one. It started with her joining the military after high school. She was never an athletic kid growing up, and the most she ever thought about nutrition was that if she ate too much, she would gain weight. Joining the military forced her to think about her health beyond just watching her calorie intake. It started with her just focusing on exercise. It eventually developed into her realizing that what she ate or didn’t eat could drastically affect her workouts and hinder her results. Vanessa became acutely aware that food is important. Whether your goal is to lose or gain weight... you have to eat! Unfortunately, she also realized that a lot of the recommended foods advertised in the media geared toward health are also not the best tasting. This started her journey toward wanting to help people reach their nutrition goals, while also not making them miserable by dictating what they “should” eat or having them eliminate favorite foods from their diet completely. This approach would only make a person’s journey toward a healthier lifestyle not only miserable, but unsustainable.
Vanessa’s journey toward becoming a Nutritionist started with culinary school, which she attended immediately after separating from the Marine Corps. She later traveled to her home state of Florida to attend Florida International University where she received both her Bachelor’s and Master’s in Dietetics and Nutrition. Knowing that she wanted to work with the Veteran community she completed her Dietetic Internship at the Louis Stokes Cleveland VA Medical Center. During her one-year internship there, Vanessa obtained hands-on experience counseling Veterans with a wide variety of health problems. She has experience counseling individuals with diabetes, renal disease, hypertension, and more. She is well aware that goals are individual to the person, and it is her job to help clients reach these objectives in the healthiest way possible, which is what excites her the most about working with Paracore Fitness & Nutrition!

Happy Friday to all of our newest followers!
I wanted to start off Paracore's social media life with introductions to our team. Let's start off with the founder of Paracore Fitness & Nutrition, LLC... ME! Aimee Carpenter.
My fitness journey really started when I was a brand new Airman who joined the Air Force back in 2009. I constantly struggled with obesity since my early childhood and now that I was working in a male dominated career field, fitness was one of the ways I wanted to set myself apart as a strong female force in my squadron. The weight room became my home away from home and I was lucky enough to be surrounded by different types of professionals in the industry who shared priceless knowledge and experience that I’ve been building upon ever since.
Fast forward 6 years later, I became a civilian again, moved to Tampa, and decided I wanted to see how far I could really push myself with my training. I trained, competed, and won three titles as a National Physique Committee (NPC) figure competitor which was, hands down, one of my biggest accomplishments to date. As someone who can never be content or sit still, I struggled to find a new challenge after my competition. When the craziness of 2020 hit, I decided it was finally time to pull the trigger and I became a NASM Certified Personal Trainer in June of this year and founded Paracore soon after.
The Paracore name was born out of my good luck charm I’ve carried with me everyday on my keychain since my Afghanistan deployment. These “monkey fists” are constructed from 550 paracord which is a military developed material known for its incredible strength and versatility. The goal of my brand is to create programs that help transform my clients to have the ability to embody the same strength represented by the paracord material and I’m so excited to see where my business can take all of you!
