Triple Chocolate Cherry Explosion Cake 🍫🍒
Ingredients:
For the Cake:
- 1 ¾ cups all-purpose flour
- 1 ½ tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- ¾ cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water

For the Cherry Filling:
- 2 cups fresh or frozen cherries, pitted
- ½ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice

For the Chocolate Ganache:
- 1 cup heavy cream
- 8 oz dark chocolate, chopped
- ¼ cup cherry liqueur (optional)

For the Chocolate Frosting:
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup milk
- 2 tsp vanilla extract

For Garnish:
- Whipped cream
- Fresh cherries
- Shaved dark chocolate

Instructions:

1. Prepare the Cherry Filling:
- In a saucepan over medium heat, combine the cherries, sugar, cornstarch, vanilla extract, and lemon juice.
- Cook for about 10 minutes, stirring until the mixture thickens. Remove from heat and let cool completely.

2. Make the Chocolate Cake:
- Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large bowl, sift together flour, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, whisk together the granulated sugar, brown sugar, eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Carefully stir in the boiling water until the batter is smooth (batter will be thin).
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

3. Make the Chocolate Ganache:
- In a small saucepan, heat the heavy cream until it just starts to simmer. Remove from heat and add the chopped dark chocolate.
- Let it sit for a few minutes, then whisk until smooth. If using, stir in cherry liqueur. Set aside to cool and thicken.

4. Prepare the Chocolate Frosting:
- In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing until combined.
- Add milk and vanilla extract and beat until the frosting is light and fluffy.

5. Assemble the Cake:
- Place one cake layer on a serving plate. Spread half of the cherry filling on top.
- Add a layer of chocolate frosting on top of the cherries.
- Place the second cake layer on top and repeat with the remaining cherry filling and frosting. Top with the final cake layer.
- Frost the top and sides of the cake with the chocolate frosting.
- Drizzle the chocolate ganache over the top of the cake, letting it cascade over the edges.

6. Garnish and Serve:
- Top with whipped cream, fresh cherries, and shaved dark chocolate for an extra touch.

• 1 cup powdered sugar (120g)

• 1 teaspoon vanilla extract

• 1 tablespoon lemon juice

• 2 cups heavy whipping cream (480ml)

For the peach topping:

• 5 cups fresh peaches, sliced (about 6 large peaches / 750g)

• ⅓ cup brown sugar (70g)

• 1 teaspoon cinnamon

• ¼ teaspoon nutmeg

• 1 tablespoon cornstarch

• 2 tablespoons water

• 1 teaspoon vanilla extract

For the cobbler crumble:

• 1 cup all-purpose flour (125g)

• ⅓ cup brown sugar (70g)

• ½ teaspoon cinnamon

• 6 tablespoons cold butter, cubed (85g)

How to make it:

Combine the graham cracker crumbs, melted butter, and brown sugar in a bowl until evenly moistened.

Press firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing the filling.

In a large bowl, beat the cream cheese until smooth and creamy.

Add powdered sugar, vanilla extract, and lemon juice. Beat until fully combined.

In a separate bowl, whip the heavy cream to stiff peaks.

Fold the whipped cream into the cream cheese mixture until light and fluffy.

Spread the cheesecake filling over the chilled crust and refrigerate for at least 6 hours, or overnight.

For the peach topping, combine peaches, brown sugar, cinnamon, and nutmeg in a saucepan over medium heat.

Biscuits & Sausage Gravy
Ingredients
2 refrigerated biscuits or homemade biscuits
1 lb breakfast sausage
3 tbsp all-purpose flour
2 1/2 cups whole milk
1/2 tsp black pepper
1/2 tsp salt
1/4 tsp garlic powder (optional)
Instructions
Bake the biscuits according to package directions until golden brown.
In a large skillet over medium heat, cook the sausage, breaking it into small crumbles, until browned and fully cooked.
Sprinkle the flour over the sausage and stir constantly for 1–2 minutes.
Gradually pour in the milk while whisking to prevent lumps.
Cook, stirring often, until the gravy thickens, about 5–7 minutes.
Season with black pepper, salt, and garlic powder if using.
Split the warm biscuits and place them on a plate.

Crispy Chicken Drumsticks with Fries & Fresh Garden Salad

Ingredients:

Chicken:

8 chicken drumsticks 🍗
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder 🧄
1 tsp onion powder
1 tsp dried oregano 🌿
½ tsp black pepper
1½ tsp salt
½ tsp chili powder (optional)

Fries:

700 g (1½ lb) potatoes, cut into thick fries
1 tbsp oil
Salt to taste

Salad:

1 small head lettuce, torn
2 tomatoes, sliced 🍅
½ red onion, thinly sliced
1 tbsp olive oil
1 tsp lemon juice
Salt and pepper

Instructions:

Preheat oven to 220°C / 425°F. Line a tray with baking paper.
Pat chicken dry. Mix oil, paprika, garlic powder, onion powder, oregano, salt, pepper, and chili. Rub all over the drumsticks.
Spread chicken onto one side of the tray.
Toss fries with oil and a little salt. Arrange beside the chicken in a single layer.
Roast for 35–40 minutes, turning fries halfway through. Chicken should be deeply golden and reach 74°C / 165°F internally.
Toss lettuce, tomatoes, and onion with olive oil, lemon juice, salt, and pepper just before serving.
Plate hot chicken with fries and fresh salad and serve immediately.
