Essential Tips for Growing Horseradish
Start horseradish from root cuttings rather than seeds, planting them in early spring as soon as the soil can be worked. Choose a sunny location with deep, fertile, well-draining soil that has been amended with plenty of organic matter—horseradish develops long taproots that can extend two feet or more into the ground. Plant root cuttings at a 45-degree angle with the crown 2-3 inches below the soil surface, spacing plants 18-24 inches apart. Because horseradish is notoriously invasive and difficult to eradicate once established, many gardeners wisely choose to grow it in large containers, buried barriers, or dedicated beds away from other perennials. To harvest, dig carefully around the plant and remove the entire root system, or take sections of roots while leaving some in the ground to regenerate. The smaller side roots can be saved as planting stock for next year's crop. One important maintenance tip: remove the flower stalks if they appear, as flowering diverts energy away from root production. For pest and disease management, horseradish is relatively trouble-free, though it may occasionally attract flea beetles or suffer from leaf spot in humid conditions. Proper spacing for air circulation and avoiding overhead watering helps prevent disease issues.
